Big Fluffy Buttermilk Pancake Recipe

I make pancakes every week, like I LOVE PANCAKES, I have tried hundred of recipes and finally with a bit adjustment, I found it. And it goes like this:


  • 2 cups / 280 gram all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 2/3 cups / 375ml buttermilk
  • 2 eggs
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla extract
  • 6 oz / 200ml Greek Yogurt
  1. in a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt. In a medium bowl, combine buttermilk, eggs, melted butter, vanilla, and Greek yogurt until smooth. Add wet ingredients to dry ingredients and mix until just combined.
  2. Lightly coat a large pan with butter or cooking spray and wipe it with paper towel and heat over medium. Drop batter by ¼ cup / 2tbsp onto pan, I have room for 3 pancakes at a time on my pan. Cook until bubbles appear on top, about 2 minutes. Flip cakes and cook until golden brown on underside, 1-2 minutes. Makes 14-16 pancakes.

The trick to get them fluffy as f* is to use REAL greek yoghurt,no fake ones and not regular yoghurt, and the vanilla extract don’t swap it with vanilla pods. You’re welcome
