Peanut Butter Chocolate Bars

Sometimes those date snacks arr just too dry or too damn healthy, so I stumbled upon this recipe, I made them – AND I CAN’T STOP EATING THEM!! Like they are so good, I am not lying. They are Vegan and Glutenfree too, like how often does that happen?

Whatever you’re doing, STOP, and go buy:


  • ¾ cup/170g cup creamy peanut butter
  • 5 Medjool dates (trust me these are the natures own caramel, alle the other are too dry)
  • 3 tbsp water
  • 2 tbsp maple syrup
  • ½ cup/50g Coconut flour (if you donate have it, you can use shredded coconut)
  • 1 cup/150g dark 80% chocolate

Place your Peanut Butter, Dates, Water, Maple Syrup and Coconut flour in a food processor, grind and grind ’til you have a smooth mass, take it out of the food processor, it’ll be solid, now make little bars, I made 10. Put them in the fridge ’til they are cool about 1 hour.
While they are cooling, melt your chocolate in a heatproof bowl over a pot of simmering water, when the chocolate has melted, roll your cooled bars in chocolate with a fork and pick them up, and let them drip of, and repeat. When they are all coated, back to the fridge for 1 hour, and VOILA! The best snack you’ve ever had!
If you feel like it, you can drizzle the bars with chopped nut, cocoa nibs, or whatever you feel like. Keep them in an airtight container in the fridge up to 1 week, but trust me they wont last that long.

And just a note, don’t compromise on the dates or the chocolate, if you use real Medjool dates then the result will be AMAZING, they are just the best.
